• 6 figs
  • 6 tsp lime juice
  • lime zest (untreated)
  • 2 tbsp Madeira VOM FASS
  • 2 tbsp Chardonnay VOM FASS
  • 1-2 tsp sugar
  • 1 piece of ginger
  • 100g mild feta cheese
  • 75g prosciutto
  • Pepper


  • Fig slices: slice the figs, lay the slices on parchment paper and then place on a trey, sprinkle some sugar, put in the oven
  • Fig puree: 3 tsp lime juice, Madeira, white wine, sugar, grated ginger and blitz ; season, taste and adjust to your taste
  • Cut the Feat cheese into dices
  • Put the fig puree on crostini, the Feta dices, the Parma ham and a slice of fig
