Ingredients for 4 people:

  • 300 g peeled king prawns
  • 3 deboned and diced chicken thighs
  • 2 cloves of garlic chopped
  • 6 shallots
  • 100g of green peas
  • 1 tsp of lemongrass paste
  • 3 Kaffir lime leaves
  • some curry powder
  • salt and pepper
  • 1 pinch palm sugar
  • 1tsp of chopped chilli
  • 1 tbsp coriander leaves
  • 2 tbsp of fish sauce
  • 2 tbsp of soy sauce
  • 400 ml of coconut milk
  • Rice

Preparation:

  • Heat up some VOM FASS rapeseed oil in a pan
  • Add the sliced shallots and leave them to caramelise
  • Add chopped garlic
  • Add the coconut oil step by step; Add lime leaves, chopped chilli, fish sauce, soy sauce, palm sugar, curry powder; season
  • Cook the prawns and chicken separately; add to the rest of the ingredients when cooked
  • Cook the rice
  • Serve with chopped coriander and chopped toasted peanuts
